Easy Summer Drinks

TAGS: July 2010 magazine, lemonade, summer drink

There’s nothing quite like a sip of lemonade on a hot summer day.

While a mid-afternoon cocktail is likely to send you straight into napping mode, these super-easy “mocktails,” which can be kept in pitchers in the fridge, will help you beat the heat and stay energized.

Frozen Mint Lemonade

  • ½ cup lemon juice
  • ½ cup sugar
  • 1 cup packed mint leaves
  • 2 cups water
  • 3 cups ice cubes, cracked if large

Blend mint, juice and sugar in a blender until the sugar dissolves. Add ice cubes and water and blend until smooth.

Lemon-Pomegranate Spritzer

  • ¼ cup pomegranate juice
  • Juice from one lemon
  • 12 oz. sparkling water

Combine all ingredients, stir, and—if you really want to get fancy—serve this drink in a glass with a sugared rim and/or a lemon slice.
